Grappa is a spirit produced by stripping the residual alcohol from grape pomace (skins, seeds, stems) created as a byproduct during wine production. Sidewinder’s Grappa was produced by distilling the pressed solids collected from various lots of Cabernet Sauvignon, Merlot, and Malbec. After pressing off the wine, the remaining pomace was loaded into our hybrid pot-column still along with water to prevent scorching. The rectifying plates in the column were bypassed during the distillation process to maximize aromatic compounds in the spirit. The spirit is un-oaked to promote the natural grape characteristics.
Grappa makes for a nice digestif after a rich meal.
